After the previously recipe with beans (that came out great by the way, the next day the pot was empty) i decided to cook beans again. This time pinto beans with smoked pork knuckle.
Baked beans with smoked pork

The good part about beans, besides the great taste and texture, is that this veggie is super healthy. One cup of beans has enough proteins to match two vegetable serving and one meat serving. Beans have calcium, potassium, magnesium, iron and most important of all they are cholesterol-free.
Ingredients:
- pinto beans - 500 grams
- smoked pork knuckle - one piece
- oil - 100 ml
- carrots - two pieces
- parsnip - one piece
- celery root - one small piece
- red bell pepper - one piece
- salt - to taste
- pepper - to taste
- tomato puree - 250 ml
- onion - one piece
- bay leaves - a few leaves
- tarragon - one teaspoon
- fresh dill - a few leaves
Instructions:
It is very important to plan ahead when cooking beans. It is known that beans take a long time to boil so, if you soak them over night in water, you will reduce the cooking time. By soaking the beans the gas producing properties will leach. For this to work you have to change the water, from time to time, with fresh water.
- After my beans have been in water for about 12 hours, i put them to boil in a stock pot. At the same time i put another stock pot with water to boil. After ten minutes i strained my beans and added over them boiling water from the other pot. I refilled it and put it to boil. Again after 10 minutes i changed the water from my beans with boiling water. I repeated this process three times to make sure the toxins were gone.
- I chopped the onion and half of the capsicum and grated one carrot.
- I finished changing the water and i added the whole pork knuckle. I added some more water to make sure the knuckle was covered.
- After it boiled i added celery, the other half of capsicum, carrot, parsnip and bay leaves.
- Due to the fact that the pork knuckle was smoked boiling it took only one hour. I took it out, let it cool and cut it into small pieces.
- After the veggies have boiled i removed them from the beans along with the bay leaves.
- In the pot in which i boiled the extra water i heated some cooking oil and sauteed the onion, carrot and capsicum. After they softened i added the pork pieces. I let them for 5 minutes and added the tomato puree.
- Using the slotted spoon i added the beans.
- I spiced with salt, pepper and tarragon and let my beans on the stove for another 10 minutes.
- Serve it hot with pickles.
